vanilla sugar

Sugar flavoured with vanilla or vanillin, usually sold in small sachets.

In German-speaking countries vanilla sugar sits on every supermarket shelf, while in the English-speaking world it is more likely found in shops with an Eastern European or German range, or by mail order. A sachet holds about 8 to 10 grams, depending on the country. Cheaper kinds are flavoured with vanillin, and those made with real vanilla taste rounder.

Substitute:

For one sachet, use about a heaped teaspoon of sugar and half a teaspoon of vanilla extract, which makes little difference in doughs and creams. Extract is not suitable for dusting, because it makes the sugar damp. For that, leave scraped-out vanilla pods in a jar of sugar for a few days.
