smoked paprika sausage
A smoked, cooked pork sausage, well seasoned with paprika and garlic.
In English-speaking countries it is mostly found in Eastern European or Hungarian delis, or by mail order, and is seldom stocked in ordinary supermarkets. A smoked cooked sausage such as Polish kielbasa works instead, with a little sweet paprika added to the dish to make up the seasoning.
Substitute:
Kielbasa or another smoked cooked sausage with a little sweet paprika comes close, though it lacks the red paprika heat. Spanish chorizo is not a good substitute, as it is dry-cured, fattier and seasoned differently.
