rice semolina
Coarsely ground rice, granular like semolina, cooking to a soft, mild porridge.
Rice semolina is sold in health food shops, in well-stocked supermarkets next to wheat semolina, and in Indian or Asian groceries, often labelled rice rava or idli rava, while in Britain ground rice or cream of rice is close. Failing that, long-grain rice can be coarsely ground in a blender or grain mill.
Substitute:
Wheat semolina works in a similar way, but it contains gluten, sets a little firmer and tastes slightly of grain rather than neutral.
