Ground dried paprika peppers with noticeable heat, similar in colour and fruitiness to sweet paprika.
In German-speaking countries hot paprika is found in almost every supermarket, while in English-speaking countries it is more likely on a well-stocked spice shelf, in Eastern European shops or by mail order. Hungarian paprika from fresh stock is best, as the powder loses colour and aroma after a few months.
Substitute:
Sweet paprika with a pinch of cayenne comes very close. Cayenne alone is much hotter and lacks the sweetness of paprika, and smoked paprika noticeably changes the flavour of the dish.
